Does this count?

The other day this was our menu for lunch:

mashed potatoes and gravy (I did add some cauliflower to the mashed potatoes, extra veggies!)
peaches
yogurt

Boring? Yes, but very kid friendly!

I'm running out of fresh ideas for lunches. What do your kids like? What do you remember having for lunch as a kid?

Grilled cheese sandwiches and tomato soup was (and still is) one of my favorite meals. Protein, dairy, grains and veggies, all in one meal!

Well, it's usually leftovers for us--I try to make some extra each night. But I'm also trying to get back into the habit of giving more variety in Collin's lunch. He will eat more if he has a little of several items to eat rather than just one or two things. So I aim for at least 4 and sometimes have as many as 7 or 8. It also takes a bit of pressure off how nutritious each item must be. So some of the things we've done recently: lunchmeat (w/ no preserv), avocado, cheese, frozen peas (still solid), pickles, olives, mac & cheese (this along w/ cheese are his ultimate favorite foods!!), tortilla w/ cream cheese (sometimes w/ veggies or lunchmeat), cucumber, green pepper, tomato, cottage cheese, grapes, sweet potatoes, canned green beans. I could go on & on...can you tell he's a good eater! If only I could get him to use his utensils!! Anyway, just wanted to pass on our hint of *variety*.
