Works for Me Wednesday and GIVEAWAY!

I have been involved in MOPS for over nine years. Yesterday our main speaker spoke on the importance of having girlfriends you can go to when you need to ask for help. Well, this morning I need help (and not just because I was up last night literally every 10-30 minutes with a newly three-year-old Avery with the stomach bug).

I made a Thai chicken and rice soup for some guests a few weeks ago. It was a big hit, and pretty simple to throw together. You could serve this in a Crockpot with rice on the side. No fuss. Here's the link:

I am so sorry about Avery's bug - I had a night like that with Jordan in Nov and it was EXHAUSTING!!! Hope you and she are in recovery!!

Sorry to hear about you having to deal with a sick kiddo! I love a brunch idea. This is a great recipe I've tried for strata: http://allrecipes.com/Recipe/Easy-Strata-and-Variations/Detail.aspx You could set out a pretty platter of fresh fruit and/or vegetables. Some women in our church recently cut long, thin strips of celery and carrots and stuck them out of tall wineglasses. That looked elegant. I would also recommend a coffeecake for dessert. Best wishes with your fancy lunch! I love MOPS too.

I hope poor little Avery is 100% better now!
Here are 2 easy recipes for some salads:

Cucumber Salad
1/2 C mayo
1/4 C sugar
4 t vinegar
1/2 t dillweed (dry)
sliced green onions or onion powder to taste
4 medium cucumbers, peeled and sliced thin.
Combine first four ingredients (add onion powder here if you're using it). Mix with cukes (and green onions). Cover and chill for an hour.
This is easily multiplied. It's creamy, and a little sweet. I bet you could add other vegetables to it! You could make the dressing ahead of time but I'd do the cukes at the last possible moment (at least, mixing them in) so they don't get mushy.

Italian Tomato Salad
5 T olive oil
4 1/2 t red wine vinegar
2 T minced fresh basil
1 T minced fresh parsley
1 garlic clove, peeled and minced
salt and pepper to taste
4 medium tomatoes, sliced
1 small red onion

Slice onion into rings. Cut tomatoes into pieces or wedges. Combine first seven ingredients in a blender. Toss with tomatoes and onion. This actually keeps very nicely and gets better over a day or so, so you can make it ahead of time.
Also, I often use dry herbs--you just want to use half as much as fresh.
